IngredientsThis is a cornmeal porridge that my wife makes either for breakfast, or just when she's feeling down. It's sweet and filling and strangely comforting.
150g yellow cornmeal
Breafast Cornmeal Pap Preparation:Method:Add the cornmeal to a bowl then pour over just enough water to cover the cornmeal. Mix with a fork then allow the mixture to sit. Bring the 1l of water to a boil, reduce the neat to a medium then stir the cornmeal and water mix before stirring into the boiling water. Cook for about 3 minutes, whilst stirring continually (you must stir continually, or the mixture will become lumpy). If the mixture begins to 'plop' and splash turn the heat down (it will be very painful if this splashes on you). Cover the pot and allow to simmer very gently for about 20 minutes, stirring occasionally to prevent burning. Turn the heat off then stir-in all the remaining ingredients. The sugar may make it sweet to your taste, but it's traditional in the Liberian version of the dish. |
