Ingredients
1/2 ripe breadfruit
Breadfruit Bread Preparation:Method:Add the yeast to 240ml warm water. Meanwhile peel the breadfruit and mash in a bowl until it forms a smooth paste. Grate the flesh of one coconut, place in a bowl and mix with 250ml water. Allow to sit for 10 minutes then strain out the milk. Sift the flour into a large bowl, add the mashed breadfruit, yeast, lard, salt and sugar. Mix together then gradually add the coconut milk until the mixture is just wet enough to knead to a smooth dough. Cover the dough, set aside in a warm place and allow to raise until doubled in size. Knock back at this stage and cut into two loaves. Knead lightly, sape into two round loaves and place on a greased baking tray. Cover with a tea towel and set aside in a warm place to raise for about 20 minutes. Place the loves in an oven pre-heated to 180°C and bake for some 20 minutes, or until the loaves are a golden brown in colour. |
