Bratwurst im Bier, Berin-art
(Bratwurst in Beer, Berlin Style) Recipe

Origin: German      Period: Traditional

Ingredients

12 bratwurst (or pork sausage)
2 tbsp butter
400ml beer
1 salt and pepper, to taste
1 tbsp flour
2 medium onions, peeled and sliced
2 bay leaves
3 tbsp parsley, chopped

(Bratwurst in Beer, Berlin Style) Preparation:


Method:

Place the Bratwurst in a saucepan and cover with boiling water. Bring to a boil and simmer for 3 mins then drain. Melt the butter in a frying pan, add the Bratwurst and fry until browned on all sides then transfer to a warm plate. Pour off all except 2 tbsp of the remaining fat. Add the onions and fry until tender. Return the sausages to the pan, add bay leaves, beer, salt and pepper. Allow to cook slowly for 15 mins (add more beer during cooking, if needed). Remove the Bratwurst to a warm plae then mix the flour with a little cold water and stir into the hot liquid in the pan. Cook, stirring, until the liquid is a thick sauce. Remove the bay leaves, add the parsley and pour the resultant sauce over the sausages. Serve with mashed potatoes and red cabbage.
