Brasmeno Boeio Kreast
(Greek Boiled Beef) Recipe

Origin: Greece      Period: Traditional

This is a classic Greek method for creating boiled beef. The beef itself forms the basis for Greek dishes such as Vodino Slata (Beef Salad) and the stock makes an excelent beef broth.

Ingredients:

1kg beef brisket
2 celery sticks cut into three pieces each
flat-leaf parsley
fresh oregano
1 bay leaf
1 onion, halved
2 garlic cloves, halved
1 carrot, cut into thirds
1 tsp whole black peppercorns salt

(Greek Boiled Beef) Preparation:


Method:

Bring a large pan of water to a boil, add salt to taste then cut the meat into serving pieces and place in the pan. Skim off any foam and fat then add the vegetables along with the herbs, garlic and black peppercorns.

Return the mixture to a boil, reduce to a simmer and cook for about 130 minutes, or until the meat is tender. Take off the heat and set aside to cool naturally. Skim any fat off the surface and use the meat in any dish you require. Strain the stock and keep for any recipe that requires a good beef stock.
