Braised Chicken with Chillies Recipe

Origin: Ghana      Period: Traditional

Ingredients

4 green chillies, finely chopped (or 4 Scotch Bonnets for a more authentic flavour)
1.5kg chicken, cut into about 10 serving-sized pieces
2 tbsp butter
1 tbsp groundnut oil
1 onion, sliced and separated into rings
250ml chicken stock
1/2 tsp freshly-grated nutmeg
salt and black pepper, to taste

Braised Chicken with Chillies Preparation:


Method:

Add the butter and oil to a pan, melt and add the chicken to brown (cook a few pieces at a time if your pan isn't very large). As each piece finishes browning remove and set aside to keep warm. Once the chicken pieces are all done add the onion rings and fry until soft then add the stock, nutmeg, salt, pepper and chillies. Bring the mixture to a boil then return the chicken to the pan, reduce the heat and simmer until the chicken is cooked (about 45 minutes).

Serve on a bed of rice. You can turn this into a complete meal by ading chopped tomatoes and cracked corn whilst the chicken is simmering.
