Braised Celery Recipe

Origin: Ireland      Period: Traditional

Ingredients:

1 head of celery
1 medium onion
1 tsp parsley, chopped
2 slices of bacon
300ml stock
salt and freshly-ground black pepper, to taste
30g butter

Braised Celery Preparation:


Method:

Clean the celery ribs then slice into 3cm pieces and place in a casserole dish. Finely chop the onion and bacon then sprinkle on top of the celery. Scatter the parsley over everything then pour the stock over the top before dotting with the butter. Cover the dish and transfer to an oven pre-heated to 180°C. Bake for about 35 minutes, adjust the seasonings and serve.
