Braised Bell Peppers Recipe

Origin: Britain      Period: Traditional

Ingredients:

300g bell peppers (a mix of colours), sliced onto 2cm square pieces
1 medium onion
1 tsp parsley, chopped
2 slices of bacon
300ml stock
salt and freshly-ground black pepper, to taste
30g Butter

Braised Bell Peppers Preparation:


Method:

Place the bell pepper pieces in the base of a casserole dish. Finely chop the onion and bacon then sprinkle on top of the bell peppers. Scatter the parsley over everything then pour the stock over the top before dotting with the butter. Cover the dish and transfer to an oven pre-heated to 180°C. Bake for about 35 minutes, adjust the seasonings and serve.
