Bracket Fungus with Red Chilli Recipe

Origin: Fusion      Period: Traditional

Ingredients:

300g bracket fungi such as beefsteak, chicken of the woods and hen of the woods
3 Thai birds' eye chillies (adjust to taste), finely chopped
1 lemongrass stalk, bruised
1 small onion, finely chopped
2 garlic cloves, chopped
juice of 1 lime
4 tbsp butter
salt and freshly-ground black pepper, to taste

Bracket Fungus with Red Chilli Preparation:


Method:

If using beefsteak fungus, wash it carefully under a cold tap then place in a pan of lightly-salted water and blanch for 5 minutes (this removes the worst of the tannins). Remove from the pan, wash under the cold tap then slice thinly.

Tear the hen of the woods or chicken of the woods in trips and wash or brush clean as you go.

Melt the butter in a pan then add the onion, garlic, lemongrass and chilli and fry for 5 minutes. Stir-in the mushrooms and cook gently, stirring frequently, for about 15 minutes, until heated through and tender.

Remove the lemongrass and discard then season with salt, black pepper and the lime juice. Serve with rice or noodles.
