Braai Sauce Recipe

Origin: South Africa      Period: Traditional

The Braai is the South African for 'barbecue' and this is a classic braai sauce for marinating meat before coking on hot coals.

Ingredients:

4 garlic cloves, crushed or grated
2 onions, finely chopped
1 green bell pepper, de-seeded and chopped
50ml malt vinegar
15ml groundnut oil
1 tin whole tomatoes, chopped
1 tbsp tomato paste
30ml Worcestershire sauce
1/2 tsp Tabasco sauce (or 1 tsp cayenne pepper)
50g brown sugar
1 tsp Dijon mustard
2 tbsp fruit chutney

Braai Sauce Preparation:


Method:

Heat the oil in a heavy pan and use to fry the onion, garlic and bell pepper until the onions are translucent. Add all the remaining ingredients, stir to combine then simmer for 30 minutes or until thickened. This can either be stored immediately in jars where it will keep for several weeks in the fridge or it can be used immediately as a marinade.
