(Potato Griddle Cakes) Recipe

Origin: Northern Ireland      Period: Traditional

Ingredients:

225g raw potatoes
225g cooked potatoes, mashed
225g plain flour
milk
1 Egg
salt and freshly-ground black pepper, to taste

(Potato Griddle Cakes) Preparation:


Method:

Grate the raw potatoes then mix in thoroughly with the mashed potatoes. Stir in the flour then season to taste. Beat the egg and add to the mixture along with just enough milk to give you a bater with a dropping consistency (ie just drops from a spoon).

Heat a griddle or frying pan with a little butter then drop the batter by the tablespoon onto this. Cook over a moderate heat for about 3 minutes per side. Tranditionally this is served as a snack with trat apple sauce. It is also a critical ingredient of an Ulster fry

The Boxty was so much a part of Northern Irish culinary tradition that an old poem states:

Boxty on the griddle, boxty in the pan,
if you can't make boxty,
you'll never get a man.
