Boxties are traditional Irish potato cakes, typically served with eggs and bacon. Ingredients:
230g raw potatoes, grated
Boxty Preparation:Method:Add the grated potatoes to a bowl and combine with the flour then stir-in the mashed potatoes until combined. Meanwhile stir together the egg and milk in a separate bowl before mixing into the potatoes. Season with the salt and black pepper. Heat the oil in a large frying pan over medium high heat then drop in the potato mixture by the spoonful, forming patties about 5cm in diameter. Fry until browned on the base (about 4 minutes) then flip over and fry on the other side for about 4 minutes more. When ready drain on kitchen paper then serve warm. |
