Botswana Beef Recipe

Origin: Botswana      Period: Traditional

Ingredients

Though this recipe is from Botswana it's more a restaurant dish intended for tourists than a 'native' dish. Nonetheless it remains a classic example of Botswanan cuisine.

250ml dark beer (but not stout)
125ml olive oil
60ml soy sauce
4 garlic cloves, crushed
4cm length of ginger, grated
2 red chillies, finely chopped
1 tsp paprika
2 tsp ground peppercorns
2 tsp coriander seeds, crushed
4 fillet steak rounds (about 225g each)
3 tbsp olive oil
8 garlic cloves, peeled
salt and freshly-ground black pepper, to taste

To serve:
4 banana leaves (obtainable from oriental stores)
fresh cayenne chillies

Botswana Beef Preparation:


Method:

Whisk together the beer, olive oil, soy sauce, crushed garlic, ginger, chillies, peppercorns and coriander seeds. Pour into a shallow dish then ad the beef. Turn several times to coat well with the marinade then cover and tore in the refrigerator for at least 6 hours.

Heat a cast iron griddle pan until very hot. Brush with the olive oil then add the steaks and the garlic cloves. Cook the meat for 3 minutes on each side to mark them nicely then cook until done to your preference. About 1 minute before the steaks are done add the cayene chillies to the pan (about 3 per steak).

Season with salt and black pepper then wrap around each steak with a strip of the banana leaf. Arrange on a plate and top with 2 garlic cloves and 3 chillies. Serve hot.
