Ingredients:

4 plantains (boli)
60g peanuts (epa)
oil

Boli ati Epa
(Baked Plantains with Peanuts) Preparation:


Method:

Peel the plantains then coat the plantains in oil, to help then caramelize and to prevent them from sticking whilst cooking. Place on a baking tray (or in a roasting tin) and set in an oven pre-heated to 190°C and bake for about 30 minutes, turning every five minutes or so until they are brown and caramelized on all sides (you can also cook on a barbecue).

Arrange on plates, scatter the peanuts over the top and serve.
