Boli Recipe

Origin: Nigeria      Period: Traditional

Boli is a very simple dish. Basically just oven-roasted plantains. But for all that it's extremely tasty.

Ingredients

1 large ripe plantain per person
salt and black pepper, to taste

Boli Preparation:


Method:

Peel the plantains, oil them lightly and season with salt and black pepper. Place on a baking tray and insert into an oven pre-heated to 170°C. Continue cooking until the plantains are fragrant and have browned as much as you like. Halve lengthways and serve with beans or a stew.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
