Boiled Wintercress Greens Recipe

Origin: Britain      Period: Traditional

Ingredients

400g wintercress greens (known as Creecy Greens in North America)
salt, to taste
black pepper, to taste
freshly-grated nutmeg
pinch of cloves
pinch of cinnamon
1/4 tsp minced rosemary
1/2 tsp fresh thyme leaves

Boiled Wintercress Greens Preparation:


Method:

Place the wintercress leaves in a pan along with enough water to cover and 1 tsp salt. Bring to a boil, cover and cook for 5 minutes. Drain the water return the leaves to the pot along with the herbs, spices and a good twist of black pepper. Bring to a boil, reduce to a simmer, cover and cook for 30 minutes then drain and serve immediately.
