Origin: German      Period: Traditional

Ingredients

6 to 8 potatoes
1/2 l milk
1 tbsp flour
1 handful crackling [broken into pieces] (or breadcrumbs)

Bodebiremus - Kartoffelmus
(Potato Mush) Preparation:


Method:

Boil the peeled potatoes, and then mash them. Put them into a 'Mus' pan (or a copper sauce pan), add the milk, and bring to a boil whilst stirring constantly. Meanwhile mix the flour and a little milk to a smooth paste and stir this in. Traditionally this is served in the copper pan, with crackling or roasted breadcrumbs scattered on top.
