Bloody Mary Soup Recipe

Origin: Britain      Period: Traditional

Ingredients:

1 medium onion, diced
3 celery sticks, diced
2 tbsp butter
2 tbsp tomato purée
1 tbsp sugar
1.2l tomato juice
1/2 tbsp salt
1/2 tbsp celery salt
2 tbsp Worcestershire sauce
1/4 tsp freshly-ground black pepper
1 tbsp lemon juice
120ml vodka

Bloody Mary Soup Preparation:


Method:

Melt the butter in a pan and use to fry the onion and celery for about 8 minutes, or until soft and golden brown. Add the tomato purée and sugar and cook for 1 minute more, stirring constantly then pour in the tomato juice.

Brig the mixture to a simmer and cook for 8 minutes before adding all the remaining ingredients. Take off the heat, pass through a fine-meashed sieve. Either serve immediately in warmed soup bowls or chill and serve cold.
