Blewits on Toast Recipe

Origin: Britain      Period: Traditional

Ingredients:

100g wild field blewit or wood blewit mushrooms, trimmed and sliced
1 spring onion, finely chopped
2 sage leaves, shredded
2 tbsp butter
60ml single cream
salt and freshly-ground black pepper, to taste
2 slices of bread, toasted


Blewits on Toast Preparation:


Method:

Melt the butter in a pan and use to fry the blewits over high heat for about 6 minutes. Stir-in the spring onion and sage and fry for 1 minute before adding the cream. Cook until the sauce thickens then season to taste with salt and freshly-groudn black pepper and serve on freshly-toasted bread.

As a guide 1 US cup of flour = 4 1/2 oz = 140g (this applies to breadcrumbs, ground almonds etc
