Bladder Campion Greens and Peanut Stew Recipe

Origin: African Fusion      Period: Modern

This is very much a fusion of West African and European. I'm using the common bladder campion as the source of greens in what, otherwise is a classic West African 'peantu and greens stew'. Even the young shoots are bitter, but they work well in this recips which originally wold have called for Nigerian bitterleaf.

Ingredients:

350g bladder campion greens (pick young leaves and tips.
1 medium onion, chopped
120ml groundnut oil
6 large tomatoes, chopped
4 piri-piri or rids-eye chillies pounded to a paste
300g smooth peanut butter
200g shelled prawns

Method:

Preparation

Add the oil to a large pan and use this to fry the onions until soft then add the tomatoes an chillies. Keep cooking until the tomatoes break down then mix the peanut butter with 200ml water and add to the stew. Continue cooking until the sauce thickens then add the bladder campion greens. Cook for five minutes and add the prawns. Cook for a further 5 mnutes then serve on a bed of rice.
