Blackcurrant Cheese Spread Recipe

Origin: Britain      Period: Traditional

Ingredients:

360g extra mature Cheddar cheese, grated
360g cream cheese
1 tsp curry powder
1 tsp brandy
120ml blackcurrant jelly
1 tsp vinegar
toasted slivered almonds

Blackcurrant Cheese Spread Preparation:


Method:

Combine the cheeses in a bowl then add the curry powder and brandy and whisk together until thoroughly blended. Meanwhile, combine the blackcurrant jelly and vinegar in a pan and heat gently until it begins to bubble. Allow to cool slightly then mix in with the cheeses. Allow to cool completely and spread on toast (brioche is excellent) top with the almonds and serve.
