Blackberry Water Ice Recipe

Origin: Britain      Period: Traditional

Ingredients

450g wild blackberries
200g sugar
150ml water
white of 1 small egg

Blackberry Water Ice Preparation:


Method:

Combine the sugar and water in a pan and heat gently until the sugar dissolves. Take off the heat and set aside to cool.

Pass the blackberries through a sieve with the back of a spoon to remove the seeds. Add the resultant juice to the syrup and mix well. Add the egg white to a clean and dry bowl then beat until it forms soft peaks. Fold the beaten egg white through the blackberry juice mixture.

Turn the mix into a plastic dish, place in the refrigerator and allow to freeze to a mush (about 30 minutes). Stir thoroughly at this point to break any large ice crystals then freeze for a further 30 minutes before stirring briskly once again. Now leave to freeze completely (at least 3 hours) before serving.
