Ingredients:
60g sugar
Blackberry Frappé Preparation:Method:Top and tail the blackberries then add to a pan along with the sugar, honey, water and orange zest. Bring to a boil then stir and reduce to a simmer. Cook for about 10 minutes, or until the fruit is pulpy. Take off the heat and set aside to cool. Pass the mixture through a fine-meshed sieve, pressing down with he back of a spoon to press as much of the juice through as possible. Combine the blackberry liquid with the lemon juice and the salt then place the liquid in the refrigerator to freeze. It should be ready to serve in about 3 hours, when it's slushy but not completely frozen. |
