Ingredients:
600ml white wine vinegar
Blackberry Cordial Preparation:Method:Combine the vinegar and blackberries in a large pot or bowl, cover with a cloth and allow to stand for 1 week, stirring occasionally. At the end of this time strain the liquid through a fine-meshed sieve lined with muslin (press down with the back of a spoon to extract as much liquid as possible). Transfer to a large pan and add the sugar and honey. Bring the mixture to a boil and stir to dissolve the syrup and honey. Allow to cool a little then bottle, secure a lid and allow to cool. Store in a cool, dark, place until needed. |
