Black Bean Salad Recipe

Origin: America      Period: Modern

Ingredients

180ml red wine vinegar
80ml vegetable oil
1½ tsp chilli powder
18g ground cumin
3 garlic cloves, crushed
550g sweetcorn, cooked and drained
500g jicama root, peeled and diced (or substitute pear)
3 medium tomatoes, seeded and chopped
300g black beans, cooked and drained
6 spring onions, thinly sliced.

Black Bean Salad Preparation:


Method:

Mix the red wine vinegar, vegetable oil, chilli powder, cumin and garlic together in a bowl until well blended. Add the remaining ingredients and toss to mix. Cover and refrigerate for two hours, stirring occasionally. Serve.
