Bissap gin emerged quite by accident as I was visiting my wife in Sénégal for Christmas and wanted to create a Sloe Gin equivalent for creating festive gin slings. The only product with a similar tartness and colour to sloes being the local hibiscus flowers, bissap. The final product ended-up being very good and flavoursome and will now become a firm family favourite. Ingredients
1.5l gin
Bissap Gin Preparation:Method:Pick-through the bissap flowers, wash under the tap and drain. Add in the base of a large base. Meanwhile, mix the gin and sugar until the sugar dissolves and pour over the bissap flowers. Stirr with a long spoon and set aside in a warm place for an hour. Stir once again, cover with clingfilm and place in the fridge over night. The following morning, take the gin out of the fridge and stir with a spoon. Keep stirring every other hour for the next eight hours then cover with clingfilm and store in the fridge over night once more. The following day, give the mix a final stir and strain through a fine-meshed sieve. The bissap can be dried for use another time. Bottle the gin and either drink as a night-cap or use as a cooking ingredient or in Gin Slings. |
