This is a sweet pizza served on a biscuit base that, in many ways, is more of a cheesecake than a pizza. Ingredients:
140g butter, softened
Biscuit Pizza Preparation:Method:Cream together the butter and sugar until light and fluffy then add the egg a little at a time, mixing thoroughly into the creamed butter after each addition. Sift together the flour, baking soda, salt and cocoa powder in a bowl then add to the creamed butter mixture and mix to combine. Now add the vanilla extract along with 70g of the chocolate pieces and 35g of the chopped pecans. Mix thoroughly to combine then spoon the batter into the base of a 30cm pizza dish that's been lined with foil and thoroughly greased. Sprinkle the coconut and the remaining pecans on top then place in an oven pre-heated to 180°C and bake for 15 minutes. Remove from the oven and sprinkle the marshmallows and the remaining chocolate pieces over the top. Return to he oven and bake for an additional 6 minutes. Allow to cool for 5 minutes in the tin then turn onto a wire rack to cool completely. Serve warm, cut into wedges. |
