Biscotti di Regina
(Queen's Biscuits) Recipe

Origin: Britain      Period: Traditional

Ingredients

550g flour, sifted
150g sugar
1 tbsp baking powder
1/4 tsp salt
200g butter or shortening
2 eggs, lightly beaten
120ml milk
115g sesame seeds

(Queen's Biscuits) Preparation:


Method:

Sift together the flour, baking powder and salt into a bowl then add the sugar and stir to combine. Add the butter (or shortening) and either rub with your fingers or cut in with two round-ended knives until the mixture comes to resemble coarse breadcrumbs. Now stir-in the eggs and milk and combine to form a soft dough. Bring the dough together with your hands and knead lightly then roll into a ball before turning out onto a lightly-floured work surface.

Tear off small pieces from the dough and work these with the palms of your hands to form sausage shapes about 3.5 to 4cm in length. Flatten these slightly then roll in the sesame seeds before placing them about 8cm apart on lightly-greased baking trays.

Transfer to an oven pre-heated to 180°C and bake for about 12 minutes, or until the biscuits are lightly golden in colour. Allow to cool on the trays for 5 minutes then transfer to a wire rack to cool completely.
