Biscotti di Consuolo
(Consolation Biscuits) Recipe

Origin: Italy      Period: Traditional

This is a classic Italian biscuit that was traditionally baked to be served during the time that a bereaved family received callers. These biscuits were served with a glass of wine. Such customs still persist in the Campania and Basilicata regions, though elsewhere these tender and tasty biscuits can be served at any time and make an excellent accompaniment to tea.

Ingredients:

280g plain flour
1/4 tsp salt
1 1/2 tsp baking powder
1 large egg
120ml honey
60ml olive oil or melted butter

Method:

Sift together the flour, salt and baking powder into a mixing bowl. In a separate bowl whisk together the egg, honey and melted butter. Pour this mixture into the flour mix and stir to bring the mix together as a dough.

Turn the dough onto a lightly-floured work surface and knead well for about 3 minutes. Lightly flour the dough then cover in clingfilm and allow to rest at room temperature for 1 hour.

At the end of this time, unwrap the dough, divide into 12 equal pieces and roll each one into a rope about 6mm thick and 30cm long. Divide each rope into three equal pieces then form a ring from each piece, and wrap into a figure of eight, making certain that the join lies beneath were the two strands of the 8 cross.

Transfer the shaped biscotti to a baking tray lined with cooking parchment then place in an oven pre-heated to 180°C and bake for about 10 minutes, or until puffed up and golden.

Allow the biscotti to cool on the baking tray for about 10 minutes then transfer to a wire rack to cool completely.
