Birnensuppe
(German Pear Soup) Recipe

Origin: German      Period: Traditional

Ingredients

2 tbsp raisins
1 tbsp dry sherry
2 small pears, cored, pared, and sliced
350ml water
3cm cinnamon stick
1 tbsp crushed aniseed
2 tsp granulated sugar
1/2 tsp lemon juice

(German Pear Soup) Preparation:


Method:

In small bowl combine raisins and sherry; set aside. In a 1l saucepan combine the pears, water, cinnamon stick, and aniseed and bring to a boil. Continue cooking until pears are very soft, about 15 minutes. Remove the cinnamon stick and allow the mixture to cool. Transfer to a blender and process until smooth. Then pour into a bowl or container and stir-in the raisin mixture, sugar, and lemon juice.

Cover and refrigerate until well chilled.
