Ingredients
100g butter, softened
Bird Nests II Preparation:Method:Separate the eggs and finely-chop the nuts. Meanwhile, cream together 100g of softened butter and the granulated sugar. Add the egg yolks, and beat well to combine then add the flour, and mix well. Form the resultant dough into small balls. Roll these balls in the egg white and then in the chopped nuts. Place the balls on a well-greased cookie tray and press centre of biscuit with your thumb. Place in an oven pre-heated to 170°C and bake for 8 minutes. Press centre of biscuit again to maintain the indentation then bake until lightly browned (about 4 to 6 minutes). When ready transfer to a wire rack to cool completely. To make the frosting, begin by blending the water, butter and vanilla together thoroughly. Slowly add the icing sugar, and mix until smooth and creamy. More water may be needed to make desired consistency. Place this in a piping bag and create criss-cross patterns over the birds nest biscuit so that they resemble twigs.
