Bilberry Pudding Recipe

Origin: England      Period: Traditional

This kind of pudding, that's much like a fruited Yorkshire pudding is common in the North of England and a range of small berries are used in its making.

Ingredients:

4 tbsp plain flour
1 egg
250ml milk
2 tbsp brown sugar
200g bilberries

Bilberry Pudding Preparation:


Method:

Beat together the flour and egg until you have a thin batter. Slowly whisk in the milk until completely combined then add the bilberries and sugar and stir with a spoon to mix thoroughly.

Turn the batter into a well greased tin then transfer to an oven pre-heated to 170଀C and bake for about 30 minutes, or until set and golden brown. Serve hot with custard.
