This is an excellent low-fat no-bake cheesecake made on a corn flakes crust that also does not need to be baked. Ingredients:
1 Corn Flakes Pie Crust
Berry Good Cheesecake Preparation:Method:Sprinkle the gelatine over the orange juice adn set aside for 10 minutes. After this time place ina small pan and heat gently, stirring constantly, until the gelatine mix. Take off the heat and allow to cool slightly before stirring in the milk and egg yolk. Return to the pan and heat gently until hot and slightly thickened (but do not boil). Take off the heat and set aside. Beat the cottage cheese until smooth then stir in the yoghurt cheese, 4 tbsp sugar substitute and orange zest then, whisking briskly, add the gelatine mixture and combine until just blended. Transfer to the refrigerator and chill until it reaches the consistency of raw egg whites. When ready, beat the egg whites in a clean and dry bowl until soft peaks form. Add 2 tbsp sugar substitute and beat until combined and the egg whites stand in soft peaks. Now gently fold the beaten egg whites into the chilled cheese mixutre. Pour into the corn flake pie crust then transfer to the refrigerator and chill for several hours, or until set. Just before serving, toss the strawberry halves with the remaining 1 tbsp sugar substitute. Arrange these on top of the cheesecake then remove the outer ring and cut into 6 wedges then serve. |
