This is a traditional British dish that uses stale English muffins to create a tasty (and frugal) breakfast. Ingredients:
360g English muffins (or buy them)
Benedict Strata Preparation:Method:Cook the bacon gently in a non-stick pan until just done then drain and transfer to a bowl to cool. Meanwhile, split the muffins and cut into cubes. When the bacon has cooled alternate in layers with the muffin pieces in a lightly-greased 20cm square baking dish. In a separate bowl, beat together the eggs, milk, mayonnaise, lemon zest and lemon juice until thoroughly combined then pour evenly over the muffin and bacon mixture. Cover with clingfilm (plastic wrap) and chill over the night in the refrigerator. The following day, uncover the dish then transfer to an oven pre-heated to 175°C and bake for about 50 minutes, or until the top of the strata is golden brown and a knife insrted in the centre of the dish emerges cleanly. Turn out onto warmed plates, garnish with chives and lemon slices then serve. |
