In Belize, chicken is almost always cooked with Recado Rojo (red achiote paste) so that the chicken emerges a ruddy colour and is nicely spiced. This deceptively simple dish gives you a true flavour of Belize. Ingredients
1 large chicken (about 1.5kg), washed and cut into serving pieces
Belizean Baked Chicken Preparation:Method:Wash the chicken thoroughly, cut into serving pieces then pat dry. Season liberally with salt, black pepper and garlic powder then rub the achote paste into the skin and flash. Arrange the chicken in the base of a roasting tin and transfer to an oven pre-heated to 180°C. Cook for about 50 minutes, or until the chicken is cooked through and nicely browned. Serve with Belizean Potato Salad and refried beans. |
