Having come up with a way to prepare Blanched and Part-dried Nettle Leaves in an African manner I've adapted a number of classic African recipes to make the most of my stores of these greens. This is one of those recipes. Ingredients:
450g beef stewing steak
Beef and Nettle Greens in Peanut Sauce Preparation:Method:Add the nettle greens to a large pot and just cover with water then bring to a boil. In a separate pot fry the meat in oil then reducethe heat. Add the nettle greens mix and their cooking water to the meat and simmer for an hour. At the end of this time pour out most of the water before adding the peanut butter. Add hot pepper sauce to taste and season with salt. Serve with Baton de Manioc or FuFu. |
