Beef Loaf with Horseradish Sauce Recipe

Origin: Britain      Period: Traditional

Ingredients:

675g lean minced beef
120g raw ham or bacon, minced
1 egg
120g breadcrumbs
1 tsp parsley, finely chopped
1 small onion, finely diced
1 pickled walnut, chopped
1/2 tsp English mustard
generous pinch of ground allspice
freshly-grated nutmeg to taste
salt and black pepper, to taste
2 tbsp Glace de Viande to glaze
Horseradish Sauce to serve

Beef Loaf with Horseradish Sauce Preparation:


Method:

Combine all the ingredients (except the egg) in a bowl and mix thoroughly to combine then add the egg and stir-in well. Bring the ingredients together as a stiff mixture (add a little more egg if needed) then turn the mixture into a well-greased loaf tin. Cover with foil or greaseproof paper and place in an oven pre-heated to 160°C.

Bake for about 120 minutes, or until the top of the mixture is well browned. Remove from the oven and press the meat mixture down with a heavy weight so it compacts as it cools. When completely cold turn the beef loaf out of the tin and brush all over with the glaze.

Serve either hot or cold with mashed potatoes and the horseradish sauce.
