Beans and Groundnut Relish Recipe

Origin: Zanzibar      Period: Traditional

Ingredients:

100g chopped onion
60ml oil
2 large tomatoes, thinly sliced
500ml peanut butter
400g cooked pea beans (or pinto beans)
600ml water

Beans and Groundnut Relish Preparation:


Method:

Fry the onion in the oil until lightly browned then add the tomatoes and peanut butter and fry for 5 minutes. Add the cooked pea beans and water and allow to simmer for half and hour, until the mixture has thickened.

Serve with Ugali, yams, rice or sweet potatoes.
