Ingredients:
2 egg whites
Beacon Hill Cookies Preparation:Method:Add the egg whites to a clean and dry bowl then whisk until they form soft peaks. Now add the sugar a tablespoon at a time, beating well after each addition. Continue beating the egg whites until the mixture stand as stiff peaks. Now stir-in the vinegar and vanilla extract before folding-in the chocolate chips and chopped nuts. Fold to combine then drop the meringue mixture by the heaped teaspoon onto greased baking trays (separate by about 6cm). Place in an oven pre-heated to 170°C and bake for about 10 minutes, or until the meringue is set and very lightly coloured. Immediately remove the meringues from the baking tray with a spatula and transfer to a wire rack until completely cool. |
