Bayrischer Kartoffelsalat
(Barvarian Potato Salad) Recipe

Origin: German      Period: Traditional

Ingredients:

1kg potatoes
1 tsp salt
80g onion, chopped
2 tbsp lemon juice
500ml chicken stock or broth
60ml vegetable oil
1/2 tsp sugar
freshly-ground black pepper, to taste

Bayrischer Kartoffelsalat
(Barvarian Potato Salad) Preparation:


Method:

Peel the potatoes and sliced to about 1.3cm thick. Boil the potatoes in the chicken stock with ¼ tsp salt for 5 to 8 minutes, until tender then drain. Toss the warm potatoes with vegetable oil and onions. Dissolve remaining ¼ tsp salt and the sugar in the lemon juice and pour over the potatoes. Marinate the salad for between 1 and 2 hours before serving. Serve at room temperature.
