Bavarian Potato Salad Recipe

Origin: German      Period: Traditional

Ingredients:

800g potatoes peeled and sliced 1.5cm thick
1/2 tsp salt
60g onion, chopped
2 tbsp lemon juice
500ml chicken stock or broth
60ml vegetable oil
1/2 tsp sugar
black pepper, to taste

Bavarian Potato Salad Preparation:


Method:

Boil potatoes in broth seasoned with half the salt for 5 to 8 minutes, or until just tender. Drain, then toss the warm potatoes with vegetable oil and onions. Dissolve the remaining salt and the sugar in the lemon juice and pour the mixture over the potatoes. Allow the salad to marinate for 1 to 2 hours before serving — serve at room temperature.
