Ingredients:
1 white cabbage, grated
Bavarian Cabbage Salad Preparation:Method:Grate the cabbage then arrange a layer in a large dish. Scatter plenty of salt over the top then arrange another layer and scatter more salt. Continue in this fashion until all the cabbage is layered in the dish. Place plenty of salt on the top then cover with clingfilm then place a tea towel over the top. Add a heavy pot on top of the towel to press the layers down (best done if you cover with another dish and sit a large pot of water in this). Set aside to marinate for at least 3 hours (best if left over night). The following day wash the cabbage and drain thoroughly to remove excess salt. Return to the dish and stir-in red wine vinegar and crushed caraway seeds. Place aside to marinate for at least an hour then stir-in crisp-fried bacon and season with sugar and more salt (if needed) before serving. |
