Bauernfruhstuck
(Farmers Breakfast) Recipe

Origin: German      Period: Traditional

Ingredients:

4 medium potatoes
4 bacon strips, cubed
3 large eggs
3 tbsp milk
1/2 tsp salt
240ml cooked ham, cut into small cubes
2 medium tomatoes, peeled
1 tbsp chives, chopped

Bauernfruhstuck
(Farmers Breakfast) Preparation:


Method:

Boil the unpeeled potatoes 30 minutes then rinse under cold water, peel and set aside to cool. Slice the potatoes when cool enough to handle. In a large frying pan cook the bacon until transperent. Add the potato slices and cook until lightly borwned. Meanwhile blend the eggs with the milk and salt. Stir in the cubed ham. Cut the tomatoes into thin wedges and add to the egg mixture. Pour the egg mixture over the potatoes in the frying pan and cook until the eggs are set. Sprinkle with chopped chives and serve at once.
