Batata Mbattina
(Lamb and Potato Sandwich) Recipe

Origin: Libya      Period: Traditional

Ingredients:

8 potatoes, peeled and thinly sliced
225g minced lamb
1 bunch coriander (cilantro), chopped
2 onions, finely chopped
2 tomatoes, finely chopped
1/2 tsp salt
1/2 chilli pepper, finely chopped
1/2 tsp freshly-ground black pepper
1/4 tsp cinnamon (ghirfa)
4 eggs, beaten
flour for dusting
oil for frying

Batata Mbattina
(Lamb and Potato Sandwich) Preparation:


Method:

Peel the potatoes and slice crossways into thin (about 3mm) slices Meanwhile, combine the lamb, coriander, onions, salt, tomato and spices in a bowl. Mix with your hands and bring together as a ball. Take a small amount of the meat mixture and stuff between two slices of potato so you have a thin sandwich with the meat in the middle. Continue in this manner until all the meat mixture is used up.

Heat a little oil in a frying pan then dip the potato sandwiches in the whisked eggs before coating evenly in flour. Fry for about 3 minutes per side, or until crisp and golden then transfer to a lightly-greased baking tray. Place in an oven pre-heated to 180°C and bake for about 15 to 20 minutes, or until the potatoes are tender.
