Barbecued Orange Chicken Recipe

Origin: America      Period: Traditional

Ingredients:

1.2kg chicken pieces
60ml vegetable oil
60ml concentrated orange juice
120ml white wine vinegar
60ml tomato purée
freshly-grated zest of 1 orange
(slice the orange and use to garnish the salad)

Barbecued Orange Chicken Preparation:


Method:

Combine all the ingredients (except the chicken) in a bowl and whisk until smooth. Meanwhile, heat you barbecue and when hot brush the skin side of the chicken with the marinade and place on the grill, skin side down. Cook for abut 15 minutes, then brush the tops of the chicken with the marinade then cook for an additional 10 minutes. Brush the chicken with more marinade and continue cooking, brushing and turning every 2 minutes for a further 10 minutes. Ensure that the chicken is cooked through (when you pierce the thickest part of the largest pieces the juices should run clear).

Transfer the chicken to a plate and serve with a tomato and fresh greens salad adorned with the orange slices.
