Barbecued Key Lime Chicken Recipe

Origin: America      Period: Traditional

Ingredients:

1.3kg boneless and skinless chicken breasts
250ml key lime (or ordinary lime) juice
1 tbsp honey
1/2 tsp freshly-ground black pepper
1/2 tsp dried thyme, ground
2 tbsp vegetable oil
1 tbsp freshly-grated ginger
slices of lime and chopped fresh coriander (to garnish)

Barbecued Key Lime Chicken Preparation:


Method:

Combine all the ingredients (except the chicken) in a blender and process until smooth. Arrange the chicken in the base of a flat-bottomed dish then pour the marinade over the top. Turn the chicken to coat evenly then cove and place in the refrigerator to marinate over night.

The following day heat up your barbecue and cook for about 35 minutes, turning every 7 minutes or so, until done all the way through (when you pierce the thickest part of the largest pieces the juices should run clear).

Serve garnished with lime slices and chopped coriander.
