Ingredients:
1 bread dough pizza base
Barbecue Chicken Pizza Preparation:Method:Turn the pizza dough onto a lightly-floured surface and either roll or pull until it's about 25cm in diameter. Transfer the dough to a lightly-greased baking sheet then using your finger and thumb turn up the edges of the dough to form a lip then cover the dough with a kitchen towel and set aside in a warm place to raise for 10 minutes. Halve the chicken breasts lengthways then fry in a little oil until nicely browned and no longer pink in the middle. Quarter each piece and transfer to a small pan along with 60ml of the barbecue sauce. Bring to a boil, toss to coat then set aside to cool. When the chicken is cold spread the remaining barbecue sauce over the top of the pizza base, almost to the edge. Spread the onions on top then chop the chicken into 1cm pieces and scatter over the pizza. Sprinkle the cheese on top then place the pizza in an oven pre-heated to 200°C and bake for about 18 minutes, or until the edges of the base are golden and crisp. Cut into wedges and serve. |
