Ingredients
3 green bananas or green plantains
Banana Porridge Preparation:Method:Wash the bananas or plantains, remove the ends then make a slit along the whole length. Use this to peel the fruit. Chop into small pieces then place in a blender (or a pestle and mortar) add the flour and render to a smooth paste. Add 120ml water and process until completely smooth. Meanwhile, bring the remaining water to a boil in a large pan then slowly add the banana mixture to the boiling water, whisking or stirring all the while. Once incorporated stir constantly with a fork for abut 3 minutes to remove any lumps (if they do form). Allow the porridge to simmer gently for about 15 minutes to thicken then stir-in the coconut cream and condensed milk and flavour with the spices and salt before sweeten to taste. |
