Banana and Pineapple Salad Recipe

Origin: Cameroon      Period: Traditional

Ingredients

2 firm, ripe, bananas, peeled and sliced
2 firm, ripe, tomatoes, sliced
1 small pineapple, peeled and sliced
1 avocado, peeled, pitted and sliced
1 tbsp roasted peanuts, coarsely chopped
400ml coconut milk

Banana and Pineapple Salad Preparation:


Method:

Place the coconut milk in a pan and bring to a boil. Set aside to cool.

Meanwhile, pile the bananas, tomatoes, pineapple and avocados in alternating layers in individual in individual bowls. Top with the thickened coconut milk and sprinkle with the chopped peanuts. Place in the fridge to chill and serve cold.
