Banana Ice Cream II Recipe

Origin: Britain      Period: Traditional

For this ice cream you need the ripest possible bananas, as they will give you by far the best flavour.

Ingredients:

4 very ripe bananas
100ml water
100g sugar
3 tbsp fresh lemon juice
250ml double cream

Banana Ice Cream II Preparation:


Method:

Add the sugar and water to a saucepan. Heat gently until the sugar dissolves then bring to a boil and immediately take off the heat then set aside to cool. Once the syrup is cold peel the bananas, chop roughly and add to a food processor along with the lemon juice. Purée until smooth then add the syrup and process. Turn into a bowl and mix in the double cream. Pour the mixture into the bowl of an ice cream machine and churn according to the manufacturer's instructions.
