Banana Fudge Cookies Recipe

Origin: America      Period: Traditional

Ingredients:

500g dry baking mix
4 tbsp unsweetened cocoa powder
70g ripe banana, mashed
1 egg, beaten
6 tbsp water (approximately)
180g dark chocolate chips, roughly chopped

Banana Fudge Cookies Preparation:


Method:

Combine the baking mix, cocoa powder, banana and egg in a bowl. Add just enough water to bring the mixture together as a soft dough then stir-in the chocolate chips. Form into a ball then turn out onto a lightly-floured work surface knead lightly the roll out to about 1.2cm thick. Cut circles with a plain 6cm round pastry cutter and transfer these to a lightly-greased baking tray.

Place in an oven pre-heated to 210°C and bake for about 10 minutes, or until lightly golden. Allow to cool for 5 minutes on the baking tray then transfer to a wire rack to cool completely. Serve smothered in butter with a good cup of tea.
